豬肉為國人動物性蛋白質主要攝取來源之一,因為富含營養,若保存不當時容易腐敗,故常以冷藏或冷凍來延長保存。冷凍肉必須先解凍以利後續加工及烹飪,流水、室溫及冷藏解凍等為常見之肉類解凍方法。為保持較佳品質及縮短解凍時間,因而發展出許多解凍方法。高週波 (radio frequency) 係利用交流電快速變換磁場使極性分子 (polar molecule) 產生震動或旋轉,藉由介電耗損 (dielectric loss) 自冷凍品內部產生熱量,進而解凍產品。工業應用時,高週波常用於產品回溫 (tempering),即將冷凍品升溫至約–5至–1℃,主要用以部分解凍及分離冷凍品以利後續加工,待回溫後常搭

配流水解凍等加速產品完全解凍。本研究之目的為探討高週波回溫結合流水解凍 (radio frequency tempering combined with lotic water thawing, RFW) 與流水解凍 (lotic water thawing, LT)、室溫解凍 (ambient thawing, AT) 及冷藏解凍 (refrigerator thawing, RT) 等傳統解凍方法對冷凍豬里脊肉物化特性及感官品評之影響。試驗中使用三品種肉豬 (Landrace × Yorkshire × Duroc) 分切為7 cm寬之背最長肌肉塊,並於樣品中心置入連續式電子溫度計監測溫度

變化,經–18℃冷凍7天後,以RFW (27.12 MHz, 50 kW, 20℃)、LT (20℃)、AT (25℃) 及RT (4℃) 解凍至樣品中心溫度達4℃後,測定其物化特性及感官品評等,並以未經冷凍之冷藏肉作為對照 (control, CON)。試驗結果顯示,RFW、LT、AT及RT組分別需時125、135、240及815分鐘解凍。各解凍組之解凍失重與烹煮失重皆無顯著差異。RT組有較少之滴水失重及擠壓失重而水分含量較高;反之,LT及RFW組水分流失較多。色澤方面,L*值AT組較高,RT組最低;a*值所有組別間皆無顯著差異;b*值各解凍組皆高於CON組,RT組數值最接近CON組;彩度

(chroma) 各組間無顯著差異;LT及AT組有最大之色相角 (hue angle)。各解凍組之pH值皆低於CON組,且RT組最低。各解凍組之TBARS值與VBN值皆高於CON組,LT及AT組較高,RT及RFW組較低。各解凍組之蛋白質溶解度 (protein solubility) 皆低於CON組,且RT及RFW組較高,AT組最低。總生菌數AT組最高,其餘各組間皆無顯著差異。生肉品評方面,各解凍組之外觀喜好皆低於CON組;異色程度以LT及AT組最高;蛋白質腐敗氣味以CON及RT組最低;脂肪氧化氣味各組皆無顯著差異;總接受度以CON組最高,其餘各組間則無顯著差異。CON組之熟肉品評外觀最高,其
