台灣與在台菲律賓的大學生對療癒飲品的認知、態度及行為研究

生活工作壓力比起從前還要來的多,強調舒壓療癒性的商品逐漸受到歡迎,餐飲業者嗅到此商機,推出許多具有療癒飲品。因此,本研究之目的是探討大學生對目前市場上有關療癒飲品的認知、態度及行為。經由五位專家訪談,確立療癒飲品的定義和研究構面,並以問卷調查法針對台灣與在台菲律賓大學生進行抽樣調查,共發放600份問卷,有效回收問卷596份,回收率達99%。本研究歸納專家意見,主要療癒飲品的特色是給人心理上有幸福和放鬆感;療癒的元素包括選用天然健康食材、外觀賞心悅目、有花果香味、味道甘甜帶酸以及口感濃郁或帶咀嚼感。以SPSS統計分析顯示,大學生對療癒飲品的認知是暖色調、清爽不膩口、簡約造型;在態度上是具有撫慰

人心、放鬆、愉快感的相關飲品;在消費行為上會跟隨流行來選擇方便攜帶具有健康的飲品。兩國不同文化背景的學生對療癒飲品的認知、態度和行為有部分具顯著差異。兩國大學生對療癒飲品的相關認知對態度和行為有顯著正向關係。本研究提供飲料店在療癒飲品的開發上需考慮療癒元素的掌握,才能呈現療癒飲品的特色。此外,國際化經營飲料店時,要考慮不同文化背景的差異性,才能針對市場的區隔、目標和定位,更精準開發療癒飲品。

受到西方飲食文化之影響,餐酒搭配逐漸成為用餐的核心要素,為增添儀式感,故將葡萄酒與美食相結合,在市場需求擴增下,葡萄酒商機日益增加。有鑑於此,品酒已然成為時尚生活型態,在台灣逐漸形成一種文化,品酒會也因應而生。品酒會在歐美風行已久,之所以廣受青睞,主要為滿足消費者感官價值,亦是吸引愛好品酒人士品嚐美酒佳餚與同好交流的最佳場合。爰此,業者如何藉由品酒體驗突顯營運價值,提升顧客滿意度與再消費意願,為本研究之目的。本研究結合體驗價值觀點探討品酒會顧客滿意度與再消費意願之影響關係,運用google表單設計問卷,針對參加過台北市品酒會的消費者,透過通訊軟體採一對一與群組進行問卷發放,問卷回收245份,

有效問卷215份,回收率88%,收集彙整後,以SPSS軟體進行統計分析。研究結果得知,不同人口統計變項對品酒會體驗價值有顯著性差異;在體驗價值、顧客滿意度與再消費意願三個變項皆有顯著關聯性與正向顯著之影響。此外,研究發現顧客對於品酒會服務優越性、服務態度與趣味性的認同程度最高,大幅提升再消費意願。因此,本研究針對品酒會主辦單位在管理實務上提出以下建議:設計個人專屬菜單,增加情感價值;體驗當地飲食文化,滿足感官價值;設計主題性活動,提升社交價值。以上建議提供業者在實務操作與學術後續研究之參考。
